There has been a lot of talk about trans-fat lately. Correct us if we're wrong, but isn't the prefix "trans" in Latin similar to the words transcend and transparent? And doesn't transcend mean superior? And transparent mean invisible? In other words, trans-fat is from the Latin for superior invisible fat. Sounds like a great situation to us! Put that in your pan and fry it.

1 acorn squash
2 tablespoons of bacon drippings (make some bacon, eat the bacon, save the drippings)
¼ teaspoon of freshly grated nutmeg
salt and pepper

Preheat your oven to 400 degrees F.

Cut the squash in half laterally and scoop out the seeds.

Drizzle with bacon drippings, nutmeg, salt and pepper. Wrap in aluminum foil.

Put directly on baking sheet in the middle rack in the oven and bake for 45 minutes. Peel off the foil and bake for 15 more minutes.

Serves 2.
