1 pound of freshly made black linguine
1 tablespoons of goose fat
3 teaspoons of garlic
1 tablespoon of olive oil
2 quails
salt and freshly ground pepper

Take the quails, remove their bones, and season to taste.

Meanwhile, boil some water for the pasta, and when the water is good and boiling, add the pasta and cook for the required time. Heat the goose fat on medium and add the garlic. Sauté for 1 minute. Then add the quail meat and cook for 3 minutes until the meat is done.

Toss the pasta with the olive oil, and add the quail and garlic mixture.
