4 handfuls of new potatoes
1 inch of butter
1 spoon of olive oil
salt and freshly ground pepper

Preheat oven to 400 F and use convection mode if you've got it.

Half the potatoes and dust with salt and pepper.

Put the butter and oil in a large jelly roll pan on medium high heat. Melt the butter while tossing with the potatoes for a few minutes in order to sufficiently coat them. Add salt and pepper. Once potatoes are fully coated, put the pan in the oven. The potatoes should be in a single layer and if not, use a second jelly roll pan.

Roast in the oven for about 25 minutes or until the potatoes are done.

Serves 2 (side dish or not).
