A highly prestigious university recently did a study of people with depression and discovered that only 5% of those depressed cooked from scratch. The study found that most depressed people ate crap. Actually, we just made that whole thing up, but we're sure it's true! Eating crappy pumpkin pie made from a can or bought at a grocery store makes us depressed. While, homemade makes us happy! Sounds scientific to me!

1 medium sugar pumpkin (or butternut squash also works)
1 cup of flour
1/2 teaspoon of salt added
3 tablespoons of cold lard
3 tablespoons of cold butter
2 tablespoons of cold water
2/3 cup brown sugar
1/4 teaspoon of freshly ground cinnamon
1/2 teaspoon of freshly grated nutmeg
1/4 teaspoon of minced fresh ginger
2 eggs, beaten
1 cup of milk
1 cup of light cream
1 tablespoon of vegetable oil
8 pecans (optional)

First, roast your pumpkin for mashing. Take the pumpkin, cut it in half, and remove the seeds. Lightly coat with vegetable oil and put on a tin foil lined baking sheet skin side up. Roast at 325 degrees F for about 45 minutes until the pumpkin is all nice and soft and almost falling apart. Then, scoop out the pumpkin out of the skin and put it in a blender and puree it. You will want 1 and 3/4 cups of roasted pumpkin.

While the pumpkin is roasting, you can make your crust. Take the flour and salt and put in a food processor. Add the lard and butter and pulse for about 30 seconds. Then, sprinkle a few drops of water at a time, using 2 tablespoons in total, all the while pulsing for a second or two. When the dough is moistened, form a ball, then roll it until it is about an 1/8 of an inch thick. Put it into a 9 inch pie pan. Keep cold in the refrigerator until you are ready to fill it.

To make your filling, put the pureed pumpkin in a bowl along with the sugar, cinnamon, nutmeg, ginger, eggs, a dash of salt, milk and cream. Mix it up good with a fork, then pour it into your pie crust.

Bake at 375 degrees F for 45 to 50 minutes. (If you remember, about 5 minutes before the pie is done, you can put 8 pecans on top.) Your pie will be done when you can poke it with a knife and it comes out clean.

Serves 6 anti-depressed people!
