black blood sausages

6 blood sausages
3 Idaho potatoes
1 spoon of thyme
a few spoons of bacon fat
salt and freshly ground pepper

Peel the potatoes and cut into eight pieces.
Add some of the bacon fat to an oven proof
pan and sear the potatoes. Add the thyme,
salt and pepper and put in a 400 degree F
oven. Cook for 25 minutes.

Hopefully you’ll be able to buy the sausages
at a good butcher like we do. Poach the
sausages for 15 minutes until they are
solidified. Remove from the water and smear
with the bacon fat. Put the sausages in the
pan with the potatoes and continue to roast
for 7-10 minutes until they are crispy.

Serves two vampires.
