Chantilly Potatoes

We hate to hone on the same subject, but we cannot fail to point out another infallible strategy to make ANYTHING sound sexy. Just add whipped cream…


2 to 3 cups of mashed potatoes proper (see
previous page)
1/2 pint of whipping cream
2 inch square chunk of Parmesan cheese

Preheat oven to 425 F.

Mound the mashed potatoes in a 8 inch-ish
round, short baking dish.

Whip the cream and mound it over on top of
the taters achieving a mountain effect.
Grate the cheese on top of said mountain.

Place in oven for about 30 minutes, until the
cheese is nice and toasty.

Serves one if by land and two if by sea.
