Cranberry Sauce for Tarts

Make this recipe for your favorite tart. May they be sweet and smooth but with an edge. Firm, yet with some give. Plump, but not too plump.

1 pint of cranberries
juice of 1 blood orange
1 teaspoon of orange zest
3/4 cup of water
sugar to taste

Add the cranberries, water, orange juice and zest together in a pot and bring to a boil. Cook for about five minutes, or until the berries become translucent and begin bursting. Remove from the heat and add the sugar to taste. Then bring back to a boil for a minute, cool and pour into a serving bowl.

If you refrigerate it, the sauce will become firm.

Serves one turkey.
