Endive Salad

Whoever invented the all-you-can-eat salad bar made a terrible mistake. In their rush to feed millions of greasy bargain-hunting patrons, they forgot about the majestic endive. The endive's bitter taste isn't for everyone, but it is for everyone who is ANYONE. The chemicals that produce the bitter flavor are considered by many to be an aphrodisiac…


2 or 3 nice size Belgium endives
1/4 cup of chopped walnuts
1/4 cup of crumbled aged good goat cheese
1 tablespoon of fresh chopped parsley
1 tablespoon of 100 year old balsamic
vinegar (or if you’re poor, save up and use 25
year old)
3 spoons of olive oil

Reserve a few (six) endive leaves and put on
plates in a star pattern.

Prepare the dressing by mixing the vinegar
with the olive oil.

Julienne (if You'don’t know what julienne
means…well, that’s your problem. Look it
up, genius.) the rest of the endive leaves
and toss with the parsley, goat cheese and
walnuts.

Arrange the reserved endive leaves on two
plates and display the tossed mixture on
them. Sprinkle with the dressing and serve.

Serves two.
