Garlic Mashed Potatoes

There are devices for sale which allow one
to create a vacuum in a bottle of wine in
order to preserve it after it’s been opened.
We believe that such devices should be
prohibited because, if you open a bottle of
wine and you don’t finish it, you don’t
deserve it.


2 to 3 Idaho potatoes
1 inch of butter
1/4 cup of heavy cream
7 or 8 cloves of garlic, minced
salt and freshly ground white peppercorns

Peel the potatoes and plunk them whole in
already boiling water. Boil for 20-25 minutes
or until they are tender the whole way
through.

Drain the potatoes. In the same pot, add half
of the butter and heat it. Fry the garlic for
two minutes, then turn the heat off. Add the
potatoes and the rest of the butter. Also add
the salt and pepper.

Mash a bit in order to melt the butter. Then
add the cream bit by bit while mashing until
they are an acceptable consistency.

Serves 2, preferably with a main dish of
some sort.
