Lettuce Soup
Remember iceberg lettuce? That
cheap stuff that you stopped eating during the economic boom because
you ate those fancy baby greens instead? Iceberg lettuce is darn
cheap, so you better swallow your pride and this soup will make
it go down easier
1 head of iceberg lettuce
5 sticks of celery
1 cup of flat leaf parsley
1 carrot
5 black peppercorns
dash of salt
4 pansies you steal from your neighbor's flower garden
Remove the stem from the lettuce
and roughly chop the leaves. Fill a big pot about three quarters
of the way full with water and the dash of salt, and bring to
a boil. Then, lower the heat to the absolute lowest setting and
put in all the ingredients except the pansies. Let the vegetables
seep for about 30 minutes. Strain through a fine sieve. Use the
pansies as garnish floating in the soup bowls.
Serves 2.
