Valentine's Dangerously

How food writers Benjamin Lews and Rodrigo Velloso do Valentine's Day, with new recipes and recipes from their book

Perfect Basmati Rice

When you make this rice, be sure to add a nice bit of butter. As long as you follow the rule to never eat more than you can lift, you'll be fine!

1 cup of basmati rice (from India ONLY, the rice from California sucks)
1 chunk of butter
4 cups of champagne
Salt

Put the rice in a bowl, and rinse with water. You can rub your fingers through the rice and keep changing the water until it is clear, probably after 8 changes or so.

Cover the rice with water and soak for 30 minutes. While the rice is soaking, take the 4 cups of champagne and pour into two glasses. Drink with your date.

Heat up 1.5 cups of water to a boil in a 1.5 quart pot and chuck in your chunk of butter and a pinch of salt.

Strain your rice, then put it in the boiling water, lower the heat to the absolute lowest point and cover. Cook for 10 minutes, then remove from the heat and let it sit for 5 more minutes. Fluff and serve.

If you follow the above directions, then the rice will be perfect, just like your relationship! If you mess it up, you can blame it on the champagne. You can't lose, which to us is perfection!

Serves 2 Valentines.
