Valentine's Dangerously

How food writers Benjamin Lews and Rodrigo Velloso do Valentine's Day, with new recipes and recipes from their book

A passion for lamb

Are you stuck in a relationship based on uncomfortable silences punctuated by occasional arguments about nothing in particular by the filcker of TV light. Sigh. Remember when Valentine's was a sure thing? A passion for lamb is 100% guaranteed to take your relationship back to sunshine, rainbows, vibrating beds and Hello Kitty. It shows your passion for your little lamb chop. Who can resist?

4 - 6 small lamb chops, trimmed to look nice
3 tablespoons of butter
1 clove of garlic, smashed
1/4 cup of passion fruit liquor (Alize for example)

salt and fresh pepper

Take a nice large pan, put in 1 tablespoon of the butter and put on medium heat. Sear all sides until much of the fat has been melted, or about 4 minutes.

At this point, there will probably be a lot of fat in the pan. As shameful as it is, you should probably pour out all but a few tablespoons of it because you don't want it to be greasy.

Put in the garlic, and sprinkle the salt and pepper on your lamb chops. Add another tablespoon of butter. Cook for 5 minutes on one side, occasionally basting with the butter. Flip, and cook for 5 minutes on the other side, continuing to baste. Depending on the thickness, and how rare you want it, it should be about done. You might as well check it by slicing into one of the chops and taking a peak.

Once done, remove your lamb chops to a plate and set aside.

Again, pour off the fat until there is only a tablespoon left. Put the pan on medium-high heat and pour in your passion fruit liquor. Simmer for a minute or two to evaporate the alcohol, then add the remaining tablespoon of butter and a little salt.

Serve your lamb chops on nice plates, and pour a little of the sauce on top of each one.

Serves 2 Valentines that cannot resist one another.
