Valentine's Dangerously

This salad will go straight to the lining of your heart

Show your sweetheart that you are into them by cooking something that will stick to his or her heart...literally! Fried goat cheese medallions help to make any rabbit food (lettuce, frissee, mesclun greens, etc.) taste great, and will really bond to valentine heart's arteries.


4 ounce goat cheese log, cold
1 egg, beaten
1 cup of bread crumbs with salt and pepper added
4 handfuls of lettuce, mesclun greens or just a large bunch of frissee
4 teaspoons of 21 year old balsamic vinegar
1 teaspoon of powdered mustard
1/4 cup of good extra virgin olive oil (for vinegrette)
3 tablespoons of so-so olive oil (for frying goat cheese, perhaps it was on sale or something)
Salt and freshly ground pepper

First, clean and dry the lettuce.

To make the goat cheese medallions, carefully cut the goat cheese log into 1/4 slices. If you have crumbly cheese, then feel free to put the slices in your palms and form them into medallions. Then, dip the slices into the egg, then into the breadcrumbs. Do this to all the slices and keep them in a few stacks off to the side.

Next, heat on medium high your 3 tablespoons of olive oil in a small 6 inch or so cast-iron pan so that there is about a 1/8 inch of oil (you can use a heavy regular pan if you aren't cool enough to own a wrought-iron pan.) When the oil is good and hot, but certainly not smoking, carefully put four of the medallions in the pan. Fry on one side for 25 seconds, gently flip with tongs, and fry for another 20 seconds so that both sides are light brown. Then, remove and dry on paper towels. Repeat with the next batch. Now, take care that you don't fry for too long because you don't want the cheese to get all melty and ooze out of the bread crumb shell.

Meanwhile, make your vinaigrette. In a bowl, whisk the mustard, balsamic vinegar, salt, and pepper. Then, add the (meanwhile, are you watching the goat cheese medallions carefully? Probably not, so go and flip them or they'll burn or smoosh out) olive oil and whisk well (don't say we didn't warn you!)

Toss the greens with your vinaigrette. Then, assemble the fried goat cheese around the edges of the plate and put the greens in the middle.

Serves 2 people who hate plants so much they want to eat them.
